Made from the youngest vines of the winery (20-25 years of age), this Ribera del Duero red wine is a blend of 85% Tempranillo and 15% Merlot. Interestingly, the Merlot vineyard is located at an altitude of 950 metres, a key factor in allowing the grapes to ripen steadily and slowly.
The grapes were destemmed, fermented in stainless steel tanks and then transferred into new, one and two-year-old French (60%) and American (40%) oak barrels, where the wine stayed for 10 months. The Tempranillo was aged in 2nd and 3rd year barrels, while the Merlot was aged in new ones.
Prior to its release, Cair Cuvée 2019 was aged for a further 6 months in the cellar before its release.
Very suggestive, with some complexity. This blend of Tempranillo and Merlot begins with some aromas of mulberries and blackberries, nuanced by notes of clay and graphite. On the background there appear some sweet spices, and some lactic and toffee remembrances, underpinned by a subtle smoky background.
